Cajun Beef and Rice

Ingredients

1/4 pound extra-lean ground beef
1 small stalk celery, chopped (1/4 cup)
1 small onion, chopped
1 teaspoon cajun seasoning
1 cup uncooked instant rice
1/4 cup , chopped green bell pepper
1/2 cup water
4 medium fresh okra sliced
1 medium tomato, chopped (1/2 cup)
1 (11 1/2-ounce) can lightly tangy eight vegetable juice

Directions:

1. Heat 10-inch nonstick skillet over medium-high heat. Cook ground beef, celery, onion and Cajun seasoning blend, stirring frequently, 4 minutes or until beef is brown and vegetables are tender.
2. Stir in remaining ingredients. Reduce heat to medium-low. Cover and cook 5 minutes or until rice is tender.
