Spicy Mint Fried Rice

Ingredients

1/4 cup olive oil
1 tablespoon finely chopped garlic
16 medium shrimp (21 to 25 per pound) shelled and deveined or 8 ounces slices chicken, beef, pork, or squid
2 teaspoons finely chopped serrano chile
4 cups Cooked White Rice or cooked brown rice
2/3 cup sliced snow pea
1/2 cup sliced onion
1/3 cup diced red bell pepper
1/3 cup diced tomato
2 tablespoons Thai fish sauce
2 tablespoons Thai sweet black bean sauce
2 tablespoons chopped fresh mint leaves
1 teaspoon black pepper
1 sprig mint leaves (garnish)

Directions:

Heat olive oil in a large skillet over high heat. Add garlic and sauté until lightly browned, about 1 minute. Add shrimp and Serrano chili and stir fry for 1 minute. Add all remaining ingredients except mint sprig and cook, stirring constantly, 3 minutes. Transfer to a serving platter, garnish with mint sprig and serve.
