Coconut Frosting

Ingredients

1 cup unsweetened coconut
2 tablespoons butter or margarine, softened
1/4 cup warm soy milk or milk
1/2 teaspoon vanilla extract
1 tablespoon honey or 4 tablespoons powdered sugar
1/4 teaspoon powdered stevia extract

Directions:

• Grind the coconut to a powder in several parts in a blender or coffee grinder. Pass the powder through a fine-mesh strainer. Regrind the coconut that didn’t pass through the strainer. If using powdered sugar, pass it through the strainer as well.
• Mix the butter or margarine into the coconut powder in a small bowl. Add the rest of the ingredients, and beat until well blended and creamy.

SERVING SUGGESTION: Use as a filler between layers of a cake or spread on the top.
