Brandied Yam Soup


Serves: 6

Ingredients

2 (1-pound 13-ounce) cans yams in light syrup, drained
1 cup chicken broth
4 cups half and half
1/4 cup brandy or maple syrup
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
2 tablespoons heaping, chopped Candied Walnuts
handful miniature marshmallow
1 to 1 3/4 pound Bread Bowl

Directions:

1. Place the yams in a blender or food processor, and blend until creamy. Add the broth and continue to blend until well combined.

2. Transfer the mixture to a large saucepan and bring to a boil. While stirring, add the half-and-half, brandy, nutmeg, and cinnamon. Reduce the heat to low and simmer about 15 minutes.

3. Spoon the soup into the bread bowl, top with pecans and marshmallows, and serve.
