Maiden's Prayer

Ingredients

1/2 pound chicken breast, boned and diced
1/8 teaspoon ground ginger
1 teaspoon soy sauce
3 cups snow peas
1/2 cup thickly sliced canned bamboo shoots
1/2 cup thinly sliced scallion
1/2 cup canned button mushrooms, drained
1/2 teaspoon salt
freshly ground black pepper
2 tablespoons dry sherry
1/4 cup peanut oil
1/2 cup thinly sliced celery

Directions:

Season chicken with ginger, sherry, soy sauce, salt and pepper. Cook in 2 tablespoons oil in large skillet over high heat for 5 minutes, stirring constantly. Remove chicken and keep hot. Put 2 tablespoons oil in skillet and add remaining ingredients. Cook over high heat for 5 minutes, stirring constantly. Remove from heat. Put chicken on top of vegetables and allow juices from chicken to soak into vegetables for 5 minutes. Return skillet to high heat and cook for 5 minutes, stirring constantly.
