Corn Scallop

Ingredients

1 (15-ounce) can cream-style corn
2 eggs, beaten
1/2 cup crushed Ritz cracker
1/4 cup butter or margarine, melted
1/4 cup undiluted evaporated milk
1/4 cup finely shredded carrot
1 tablespoon chopped celery
1/4 cup chopped green bell pepper
1 teaspoon chopped onion
1/2 teaspoon sugar
1/2 teaspoon salt
1/2 cup shredded Cheddar cheese
paprika

Directions:

Combine corn and remaining ingredients except cheese and paprika. Mix thoroughly and turn into a greased 8x8x2-inch baking dish. Top with cheese and sprinkle with paprika. Bake at 350° for 30 minutes or until mixture is set and top is golden brown.
