Great Fresh Strawberry Pie

Ingredients

Crust:
1 1/2 cups all-purpose flour
2 tablespoons sugar
2 tablespoons cold milk
1/2 teaspoon salt
1/2 cup Mazola corn oil (for some reason no other kind of oil will work)

Filling :
1 quart fresh, ripe strawberries
1 cup sugar
2 tablespoons well-rounded cornstarch
2 tablespoons white corn syrup
1 cup water
2 tablespoons strawberry jello

Directions:

For Crust:
Blend ingredients together, and pat by hand into 9-inch pie pan. Bake in a 450° oven for about 10 minutes; the Crust will be starting to brown. Cool Crust, then fill.

(This Crust is super easy and very flaky. The taste is slightly sweet. It can be used for other 1-crust pie recipes, and is especially good when the filling is slightly tart.)

Filling:
Clean, and drain strawberries. In a saucepan, blend together sugar and cornstarch. Slowly mix in syrup and water, stirring well so there are no lumps. Cook until the mixture is thick and clear.

Remove from heat, and add 2 tablespoons strawberry Jell-O dry mix. Stir until Jell-O is dissolved. Immediately add strawberries to hot Filling, and stir in. When Filling has begun to cool, pour into Crust. Refrigerate.

Editor’s Extra: Real whipped cream is our favorite to top slices, but any
kind will do.
