Easy Pear Pie

Ingredients

3 or 4 fresh, ripe pears
1 (9-inch) unbaked pie crust
1 cup sugar
1 cup all-purpose flour
1/4 cup butter, melted
2 eggs
1 teaspoon lemon juice
1/2 teaspoon vanilla extract
1/2 teaspoon ground ginger

Directions:

Preheat oven to 400°. Wash and drain pears. Cut pears (peeled or unpeeled) lengthwise into halves; remove core, and stem ends with paring knife. Arrange pears cut-side-down in pie shell, with wide ends of pears near outside edge of shell; set aside. Beat sugar, flour, butter, eggs, lemon juice, vanilla, and ginger with electric mixer till smooth and blended. Pour into pear-lined shell.

Bake for 40–45 minutes, or till golden brown and top springs back when lightly pressed with finger. Serve warm. Refrigerate any leftovers.
