Ingredients

2 large leaves Romaine lettuce
1/2 cup alfalfa or clover sprouts
1/4 avocado, sliced
1/2 Roma tomato, sliced
6 thin slices onions
1 tablespoon Ranch Dressing (recipe found in Salad Dressings chapter)

Directions:

Equipment:
measuring cups
cutting board
peeler
chef’s knife, 8-inch
serrated knife, 5-inch
mandoline (optional, for thinly slicing cucumber and onion)
measuring spoons

Arrange the sprouts, avocado, cucumber, tomato, and onion on one leaf of the romaine lettuce. Drizzle with the dressing. Put the second lettuce leaf on top. Serve immediately.
