Ingredients

3 dried figs, trimmed, soaked in water for 10 minutes and drained
1/4 cup extra-virgin olive oil
1/4 cup water
1 tablespoon freshly squeezed lemon juice
1 tablespoon balsamic vinegar
1/4 teaspoon salt
dash ground pepper

Directions:

Equipment:
cutting board
paring knife
small bowl
small colander or fine-mesh strainer
measuring cups
citrus juicer or reamer
measuring spoons
blender
rubber spatula

Put all the ingredients in a blender and process on medium speed until smooth. Stored in a sealed jar in the refrigerator, Fig Dressing will keep for 3 days.
