Simple Potato Soup

Ingredients

1/2 medium onion, chopped
2 tablespoons butter or margarine
3 to 5 large russet potatoes, cubed
6 1/4 cups water
2 teaspoons salt
1 teaspoon pepper
1 (12-ounce) can evaporated milk
1 (15 1/2-ounce) can whole kernal corn, drained

Directions:

In a 4-quart soup pan, saute onion and butter together until onion becomes transparent. Add potatoes, water, salt, and pepper and bring to a boil. Gently boil potatoes 15 minutes, or until tender. Reduce to low heat. Stir in milk and corn. Cook on low heat an additional 5 minutes. Garnish with grated cheddar cheese. Makes 8–10 servings.

VARIATION: Add 11/2 cups ham, cooked and diced.
