Garlic Mashed Red Potatoes


Serves: 4
Total Calories: 400

Ingredients

5 to 6 medium red potatoes, cut into chunks
1/2 cup butter or margarine
1/2 cup grated Romano cheese
2 tablespoons minced garlic
1 teaspoon oregano
1 teaspoon salt

Directions:

In a 4-quart pan, cover potatoes with water. Bring to a boil, then simmer 20–25 minutes, or until potatoes are tender. Drain. Stir in butter, cheese, garlic, oregano, and salt. Mash with a potato masher or mix with an electric mixer. Serve immediately. Makes 4 servings.

If potatoes are too stiff, add 1/4 cup milk or half-and-half.
