Coconut Chocolate Bars

Ingredients

1/4 cup hot mashed* potato, unseasoned
2 cups powdered sugar
1 teaspoon corn syrup
2 cups coconut
1 teaspoon vanilla extract
1 cup semi sweet or milk chocolate chips

Directions:

Mix hot mashed potato with powdered sugar, corn syrup, coconut, and vanilla. Stir until well blended. Press into a lightly greased 8 x 8-inch pan or a pie pan.

Melt chocolate chips in a small saucepan over low heat, stirring constantly. Spread melted chocolate over coconut layer. Chill or freeze until chocolate hardens. Cut and serve. Makes 12–16 servings.
