Swiss Cheese Soufflé

Ingredients

2 tablespoons butter or margarine
2 tablespoons flour
1/2 teaspoon dry mustard
1/2 teaspoon salt
1/8 teaspoon pepper
1 cup milk
1 cup Swiss cheese, grated
4 egg yolk
4 egg whites

Directions:

Melt butter in saucepan. Blend in flour, mustard, salt, and pepper. Add milk gradually cook and stir until mixture thickens simmer 1 minute. Add Swiss cheese stir until it melts. Beat egg yolks and add. Beat egg whites until stiff fold in. Pour mixture into top of double boiler cover and cook over gently boiling water about 1 hour until inserted knife comes out clean.
