Peach Soufflé

Ingredients

1/2 cup sugar
1 envelope unflavored gelatin
1/4 teaspoon nutmeg
1/8 teaspoon salt
1/2 cup water
4 egg yolk, beaten
1 tablespoon lemon juice
1/2 teaspoon vanilla extract
few drops almond extract
4 large, fresh peaches
4 egg whites
1/2 cup whipping cream

Directions:

Combine sugar, gelatin, nutmeg, salt, and water cook over low heat until gelatin dissolves, stirring constantly. Gradually stir beaten egg yolks into mixture. Add lemon juice cook until thickened. Remove from heat cool. Add vanilla and almond extract. Chop peaches finely in blender add to mixture. Chill. Whip egg whites until stiff and fold in. Whip cream and fold in. Chill until firm and garnish with toasted almonds.
