Quick Spinach Soup


Serves: 6

Ingredients

1 package frozen leaf spinach in butter sauce
1 large potato, diced
1 large onion, chopped
2 tablespoons butter or margarine
3 cups water
2 tablespoons chopped parsley
4 chicken bouillon cubes
salt and pepper to taste
sour cream

Directions:

Cook spinach according to directions. Combine potato, onion, butter, water, parsley, bouillon, salt and pepper bring to a boil in saucepan and cook until tender. Whirl all together in blender. Pour into bowls and swirl sour cream on top.
