Planked Halibut

Ingredients

4 halibut steaks
1/4 cup butter, melted
2 tablespoons olive oil
1 tablespoon vinegar
2 teaspoons lemon juice
1 clove garlic, minced
1/4 teaspoon dry mustard
1/2 teaspoon salt
1/8 teaspoon pepper
2 large zucchini
1 package frozen green peas, cooked
1 (8 1/4-ounce) can tiny carrot
seasoned mashed potato

Directions:

Place halibut steaks in greased baking dish. Combine butter, olive oil, vinegar, lemon juice, garlic, mustard, salt and pepper spread on top. Meanwhile, halve and scoop out centers of zucchinis cook until tender. Fill with green peas and tiny carrots. Make mounds of mashed potatoes. Arrange fish and vegetables on large, oven-proof platter. Dot with butter and broil until potatoes are browned slightly.
