Pineapple Snow

Ingredients

1 tablespoon plain gelatin
1/4 cup cold water
1 cup crushed pineapple
3 tablespoons lemon juice
dash salt
1/4 cup sugar
1/4 cup water
2 egg whites

Directions:

Soften plain gelatin in cold water for five minutes. Place over hot water to melt. In bowl, combine crushed pineapple, lemon juice, and salt. Add melted gelatin and refrigerate until thickened. Meanwhile combine in top of double boiler, sugar, water and egg whites. Place over boiling water and beat until stiff and shiny. Fold in chilled pineapple mixture.
