Sunny Mediterranean Olive and Orange Salad

Ingredients

4 large oranges peeled and cut into small pieces
1/2 cup halved black olives
1/2 teaspoon ground cumin
1/8 teaspoon cayenne pepper
4 lettuce cups (single curved leaves)

Directions:

1. Place the oranges and olives in a medium-sized bowl, and toss to mix. Refrigerate for at least 1 hour, or until ready to serve.

2. Just before serving, mix the cumin and cayenne together in a small dish.

3. Divide the orange and olive mixture evenly among the 4 lettuce cups. Sprinkle the spice mixture evenly over each, and serve immediately.
