All-American Hot Potato Salad

Ingredients

1 cup mayonnaise
1/4 cup finely chopped onion
1/2 cup sliced olives of your choice
1/2 tablespoon prepared mustard
8 small red potatoes (about 1 1/2 pounds), cooked, peeled, cubed, and cooled
salt and cracked pepper to taste
1 pound American cheese cubed
8 ounces bacon cooked, drained, and crumbled

Directions:

1. Place the mayonnaise in a large bowl. Add the onion, olives, and mustard, and stir until well mixed.

2. Add the cubed potatoes to the mayonnaise mixture. Sprinkle lightly with salt and cracked pepper, and use a large spoon to gently incorporate the potatoes into the mayonnaise.

3. Add the cheese cubes, and stir again to mix well.

4. Lightly grease a 9-x-11-inch baking dish with olive oil cooking spray, and turn the potato salad into the dish. Sprinkle the crumbled bacon over the top and bake uncovered in a preheated 300°F oven for 30 to 40 minutes, or until the cheese is melted and bubbling. Serve immediately.
