Happy Healthy Brownies

Ingredients

2 cups sugar
1 cup flour
3/4 cup unsweetened cocoa
1/4 teaspoon salt
3 eggs
1/2 cup extra-light olive oil
2 tablespoons prune or apple puree baby food
1 teaspoon vanilla extract

Directions:

1. Place the sugar, flour, cocoa powder, and salt in a large bowl, and stir to combine. Be sure that the cocoa is blended in well.

2. Place the eggs, olive oil, fruit purée, and vanilla extract in a small bowl, and beat with an electric mixer until well combined.

3. Add the wet ingredients to the dry ingredients and combine thoroughly with an electric mixer or a spoon. The batter will be stiff.

4. Grease a 9-x-13-inch baking pan, and push the batter into the pan. Resist the temptation to use a smaller pan. These brownies bake best when the batter is less than 1 inch deep.

5. Bake in a preheated 350°F oven for about 20 minutes, or until a toothpick inserted in the center comes out clean. Place the pan on a wire rack, and allow to cool for 10 minutes. Cut into squares while warm.
