Split Pea Soup with Ham

Ingredients

2 pounds cooked ham
1 (16-ounce) package (2 cups) dried split peas
1 teaspoon salt
1/2 teaspoon basil leaves
1 large onion, chopped
1/4 teaspoon pepper
8 cups water
4 celery stalks, sliced
5 carrots, peeled and sliced

Directions:

Cut ham into 1/2- to 1-inch cubes. In a 12-inch Dutch oven, combine all ingredients except celery and carrots. Simmer, covered, at about 325°-350°, for one hour. (Heat from bottom only). Stir in celery and carrots. Continue simmering, covered, for 1/2 -1 hour, or until peas are tender and soup thickens.
