Gayle’s Chicken Tortilla Soup


Serves: 5

Ingredients

2 (14-ounce) cans chicken broth
2 cups diced, cooked chicken
1 (4-ounce) can mild diced green chiles
1 (15-ounce) can corn, drained
1 (10 3/4-ounce) can fat-free cream of chicken soup
1/2 teaspoon ground cumin
1 fresh chopped cilantro to taste
1 fresh lime juice (optional)
1 Condiments: shredded cheese, crushed tortilla chips, diced tomatoes, diced avocado, sliced green onions, sliced black olives, sour cream

Directions:

Bring broth to a boil and add remaining ingredients, except condiments. Simmer for a few minutes to blend flavors, then ladle into bowls. Top immediately with desired condiments and serve.

Note: You can place condiments in bowl first and pour soup on top.
