Salmon Grilled with Red Onion Butter

Ingredients

2 (6-ounce) salmon fillets
salt and pepper to taste
olive oil

Red Onion Butter:
1 red onion, sliced
pinch of salt
1 cup red wine
2 tablespoons cream
1 pound unsalted butter, softened
salt and pepper to taste
carrot curls for garnish
zucchini and squash slices for garnish
daikon slices for garnish (Japanese mild radish)

Directions:

Season fillets. Brush with olive oil. Grill to medium.

Red Onion Butter:
Sweat onion in a little butter with a pinch of salt covering pan and cooking 5 minutes. The moisture will be drawn out of the onion without caramelizing onion. Add red wine. Reduce, then add cream; reduce until thick. Whip in softened butter, one chunk at a time. Season with salt and pepper to taste. Place salmon on plate; put Red Onion Butter on side. Garnish with fresh vegetables.
