Cheesy Turkey Bake

Ingredients

3 cups diced turkey
2 cups cooked rice
1 medium onion, chopped
1/2 cup chopped celery
1 (10 3/4-ounce) can cream of mushroom soup
1 cup mayonnaise
1 (15-ounce) can mixed vegetables, drained
4 tablespoons lemon juice
2 teaspoons salt
1 cup grated smokey Cheddar cheese
2 (9-inch) deep-dish pie shells
4 tablespoons butter, melted
2 cups crushed cornflakes

Directions:

In large bowl, mix all ingredients except pie shells, cornflakes, and butter. Refrigerate overnight or several hours.

Precook pie shells 10 minutes at 400°. Fill pie shells with turkey mixture and bake 40 minutes at 350°. Melt butter and sauté cornflakes. Sprinkle this topping over pies and bake 5 more minutes.
