Turkey Tetrazzini

Ingredients

1 cup onion, chopped
1 cup celery, chopped
1/2 cup butter
1/2 cup all-purpose flour
1/2 cup milk
3 cups turkey gravy or turkey broth
1 cup shredded Monterey Jack cheese, divided
poultry seasoning, salt and pepper to taste
2 1/2 cups turkeys, cooked and diced
5 cups prepared rotini
1 (10-ounce) package frozen peas, , thawed
1 cup sliced mushrooms
1/2 cup seasoned bread crumbs

Directions:

Sauté onion and celery in butter in a 12" skillet until tender reduce heat and whisk in flour and milk. Stir in gravy or broth, whisking constantly. Heat over low heat until thickened add 3/4 cup cheese, stirring until melted. Season as desired. Combine sauce with turkey, pasta, peas and mushrooms spread in a 3-quart baking dish. Sprinkle with remaining cheese and bread crumbs bake at 350 degrees until hot and bubbly, about 20 to 30 minutes.
