Meatless Bacon Cornmeal Scones

Ingredients

4 slices Morningstar Farms® Breakfast veggie bacon strips
1 1/4 cups all-purpose flour
3/4 cup yellow cornmeal
3 tablespoons firmly packed brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1/8 teaspoon ground red cayenne pepper
1/4 cup margarine or butter
1/2 cup non-fat buttermilk
2 tablespoons chopped green onions
1/4 cup Morningstar Farms® Scramblers® egg substitute
1/2 cup shredded Cheddar cheese

Directions:

1. Prepare MORNINGSTAR FARMS Breakfast Strips according to package directions. Crumble into fine pieces and set aside.

2. Combine dry ingredients in medium mixing bowl. Cut in margarine with a pastry cutter until mixture resembles coarse meal. Add buttermilk, onions, crumbled MORNINGSTAR FARMS Breakfast Strips and MORNINGSTAR FARMS SCRAMBLERS. Mix just to moisten dry ingredients.

3. Turn dough out onto a lightly floured surface. Knead 4-5 times with floured hands. Pat dough into 1/2-inch thick circle. Cut 2-inch circles from dough with a biscuit cutter or water glass. Place circles on baking sheet coated with cooking spray. Place 1/2 tablespoon of shredded cheese on top of each scone.

4. Bake at 400°F about 12 minutes or until golden brown. Serve warm.
