Tomato Sauce with Onion

Ingredients

3 tablespoons unsalted butter
1 tablespoon olive oil
1 small onion, very finely chopped
3 pounds plum tomatoes, peeled, seeded and chopped, or 1 (28-ounce) can imported Italian peeled tomatoes with their juice, passed through a food mill
salt and freshly ground black pepper to taste

Directions:

1 In a medium, heavy saucepan, melt the butter with the oil over medium heat. Add the onion and cook, stirring once or twice, until the onion is tender and golden, about 7 minutes.

2 Add the tomatoes and salt and pepper. Bring the sauce to a simmer and cook 20 minutes or until thickened.
