Tomato Sauce, Tuscan Style

Ingredients

4 tablespoons olive oil
1 medium onion, finely chopped
1/2 cup chopped carrot
1/4 cup chopped celery
1 clove small garlic, minced
3 pounds fresh ripe plum tomatoes, peeled, seeded, and finely chopped, or 1 (28-ounce) can imported Italian peeled tomatoes with their juice, passed through a food mill
1/2 cup chicken broth
pinch of crushed red pepper
salt
2 to 3 basil leaves, torn

Directions:

1 Pour the oil into a medium saucepan. Add the onion, carrot, celery, and garlic. Cook over medium heat, stirring occasionally, until the vegetables are tender and golden, about 15 minutes.

2 Stir in the tomatoes, broth, red pepper, and salt to taste. Bring to a simmer. Partially cover the pan and cook over low heat, stirring occasionally, until thickened, about 30 minutes.

3 Stir in the basil. Serve hot. Can be made ahead and stored in a tightly sealed container in the refrigerator up to 5 days or in the freezer up to 2 months.
