Sun-Dried Tomato Sauce

Serves: 6

1/2 cup drained marinated sun-dried tomato, very finely chopped
2 tablespoons chopped fresh parsley
1 tablespoon chopped capers
1/2 cup extra-virgin olive oil
1 tablespoon balsamic vinegar
Freshly ground black pepper


In a medium bowl, whisk together all of the ingredients. Let stand 1 hour at room temperature before serving. Serve at room temperature. Store in an airtight container in the refrigerator up to 2 days.
