Soba Noodles With Spicy Tofu

Ingredients

1 (9-ounce) package buck-wheat soba noodles
1/2 cup chipotle salsa
1/3 cup teriyaki sauce
1 (8-ounce) package spicy tofu (Mexican or Southwest), cut into 1/2-inch cubes
2 tablespoons extra-virgin olive oil
4 scallion, trimmed and sliced

Directions:

Bring a large pot of salted water to a boil. Add the soba, stirring a few times to ensure that the pasta does not stick to itself. Boil vigorously for the time recommended on the pasta package or until the pasta is tender, about 4 minutes. Drain.

Meanwhile, combine the chipotle salsa, teriyaki sauce, tofu, and olive oil in a microwave-safe serving bowl. Cover and heat in a microwave at full power until simmering, about 2 to 3 minutes (or heat to simmering in a saucepan). Toss the cooked noodles, scallions, and sauce until the noodles are coated with sauce.
