Grilled Polenta With Rabe And Spicy Sun-Dried Tomato Sauce

Ingredients

1 (12-ounce) bag micro-ready broccoli rabe
2 tablespoons vegetable oil
1 (18-ounce) tube cooked polenta, cut into 8 1/2-inch-thick slices
4 ounces spicy vegan sausages, such as Soyrizo, crumbled
1 cup tomato paste sauce
2 tablespoons sun-dried tomato paste
2 tablespoons garlic-flavored oils
1 teaspoon salt
3 tablespoons grated imported Parmesan cheese

Directions:

Cook the bag of broccoli rabe in a microwave at full power for 4 minutes.

Meanwhile, heat the oil in a large, nonstick skillet over medium-high heat. Brown the polenta slices on both sides in the hot oil. Transfer to a plate, cover, and keep warm. Add the sausage to the pan and cook until browned, about 2 minutes. Add the tomato sauce and sun-dried tomato pesto, and simmer for a few minutes.

Toss the cooked broccoli rabe, garlic oil, and salt in a bowl.

Serve by placing 2 polenta slices on a pool of sauce on each plate. Top each slice with a spoonful of sauce and a mound of broccoli rabe. Serve with the cheese, if desired.
