Greens And Beans

Ingredients

2 1/2 cups water
1 (1-pound) bag frozen or refrigerated chopped collard
1 (10-ounce) package frozen or refrigerated cooked blackeyed pea
1/3 cup hickory-flavored barbecue sauce
4 ounces extra-firm tofu, cut into 1/4-inch cubes
salt and ground black pepper to taste

Directions:

Heat the water to boiling over medium-high heat in a large skillet. Add the collard and black-eyed peas and simmer until both are tender, about 15 minutes. Stir in the barbecue sauce and tofu and cook for another 2 to 3 minutes. Season with salt and pepper before serving.
