Roasted Caramelized Garlic


Serves: 10

Ingredients

3 whole heads garlic
1 tablespoon olive oil

Directions:

Heat the oven to 400°F. Cut the pointed ends off the garlic heads, exposing most of the cloves. Place each garlic head cut-side up on a 6-inch square of aluminum foil, drizzle each with 1 teaspoon of the oil, and wrap the foil around the garlic so that it is completely enclosed. Place near the middle of the oven and roast for 30 minutes.

Unwrap and let cool for 10 minutes. Peel the papery skin from the roasted garlic cloves. Refrigerate in a tightly closed container for up to 2 weeks. Use in any recipe calling for roasted garlic.
