Citrus Zest

Ingredients

1 lemon, lime or orange

Directions:

Method 1: Rub the fruit against the finest teeth of a grater, turning the fruit so that you remove only the thin, colored skin. Try to avoid removing any of the white rind underneath.

Method 2: Peel the colored skin from the outside of the fruit, using a vegetable peeler, trying to avoid removing any of the white rind underneath. Chop the rind with a sharp knife into thin strips, or mince it, as desired.

Method 3: Remove the colored skin from the outside of the fruit, using a citrus zester, trying to avoid removing any of the white rind underneath. The zest will come off in thin strips chop if desired.
