Sausage Pilaf


Serves: 6

Ingredients

1 pound hot pork sausage
1 cup chopped celery
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 cup cream of mushroom soup
3 cups cooked rice
1/2 cup chopped cashew nuts or peanuts (optional)

Directions:

Brown sausage, drain; add celery, onion, and pepper. Cook 3 to 5 minutes. Stir in soup and rice. Pour into a 1-quart casserole. Cover. Bake 20 minutes at 350°. Remove from oven, sprinkle nuts on top and return to oven uncovered for 10 minutes longer.
