Hot Pepper Rice

Ingredients

3 cups cooked long grain rice
1 cup sour cream
1 (4-ounce) can chopped green chili, drained
1 medium fresh jalapeño pepper, seeded and diced (optional)
1 (8-ounce) package Monterey Jack cheese, shredded and divided
1/2 cup shredded Cheddar cheese

Directions:

Combine rice, sour cream, green chiles, and jalapeño pepper. Layer half of rice mixture in a lightly greased 7x11x2-inch baking dish; top with half of the Monterey Jack cheese. Repeat procedure and sprinkle with Cheddar cheese. Bake at 350° for 15 minutes or until cheese melts and casserole is heated through.

Even Easier: Try substituting hot pepper cheese for the jalapeño pepper and Jack cheese. Olé spicy!
