Cottage Pancakes

Ingredients

3 eggs, separated
1 whole egg
1 cup cottage cheese, small curd (or ricotta cheese)
1/4 cup flour
1/4 teaspoon salt
1 apple, grated
margarine or butter for frying

Directions:

Beat 3 egg whites until stiff; set aside. Place whole egg and egg yolks in bowl with cottage cheese, flour, salt, and apple. Blend well. Fold in beaten egg whites. Heat butter or margarine in skillet. Drop batter by tablespoonfuls into skillet and fry until golden brown. Turn only once.


Fun Fact: There is an International Pancake Race held annually in Liberal, Kansas. On Shrove Tuesday (the day before Lent begins), women contestants run 415 yards through the main streets of town flipping pancakes in skillets.
