Lime Cheesecake

Ingredients

1 (9-ounce) package chocolate wafers, finely crushed
4 tablespoons butter, melted
3 extra-large eggs
1 cup sugar
1/2 cup fresh lime juice
1 tablespoon vanilla
24 ounces cream cheese
16 ounces sour cream
1/4 cup sugar

Directions:

Preheat the oven to 300°. Mix the crushed chocolate wafers with the melted butter and press the mixture into the bottom and 1 inch up the sides of a 9-inch springform pan. Chill.

Mix the eggs and 1 cup sugar with a blender for several minutes until pale yellow. Add the lime juice and vanilla and combine.

In a bowl, cream the cream cheese until soft, and slowly add the egg- and-sugar mixture. Fill the prepared pan and bake at 300° for 50 minutes or until the top is set. Allow to cool.

In a separate bowl, mix the sour cream with the 1/4 cup sugar and spoon over the top of the cooled cake. Bake for 10 minutes more. Chill overnight.

Run a sharp knife between the crust and the pan before you unmold the cake.
