Zucchini Appetizers


Serves: 5

Yield: 4 dozen 2x1-inch appetizers

Ingredients

1 cup biscuit mix
3 cups unpeeled and thinly sliced zucchini (about 4 small)
1/2 cup finely chopped onion
3/4 cup grated Parmesan cheese
2 tablespoons snipped parsley
4 eggs, beaten
1/2 teaspoon salt
1/2 teaspoon seasoned salt
couple dashes of pepper, both black and cayenne
1/2 cup vegetable oil

Directions:

Mix all ingredients and spread in a greased 9x13-inch pan. Bake at 350° for about 30 minutes, or until golden brown. Serve hot out of the oven. Can be made ahead and reheated.
