Minnesota Lobster

Ingredients

3 quarts water
1 medium-size onion, quartered
salt to taste
1/2 cup lemon juice
3 stalks celery, chopped
3 - 4 pounds fish fillets, cut into 2-inch pieces
1 cup butter, melted, divided
paprika

Directions:

Place water, onion, salt, lemon juice, and celery in a 4-quart pot; bring to a boil. Add fish and boil for 5 minutes. Drain fish and place on a baking sheet. Brush with melted butter and sprinkle with paprika. Broil fish for 2 minutes. Sprinkle with paprika and serve with remaining melted butter.

Note: Northern Pike, Lake Trout, Coho Salmon, Steelhead, or any other firm deep-water fish may be used.
