Grilled Mahi Mahi with Mango Salsa

Ingredients

2 pounds Mahi Mahi (or halibut, cod, or red snapper)

Mango Salsa:
3 tablespoons lime juice
1 tablespoon fish sauce or fish extract
1 teaspoon sugar
2 tablespoons sliced green onions
1 1/2 cups chopped tomatoes
2 ripe but firm mangos, peeled and diced
1 cup chopped Walla Wall or other sweet onion
2 tablespoons chopped fresh cilantro
1 or 2 jalapeño pepper, chopped, or 1 teaspoon crushed red pepper
1 teaspoon minced garlic

Directions:

Grill Mahi Mahi over medium-hot coals until fish flakes easily, about 15 minutes. Serve Mango Salsa over fish.

Mango Salsa:
Combine lime juice, fish sauce, and sugar in a large bowl. Stir until sugar dissolves. Add remaining salsa ingredients; mix, cover and refrigerate for 30 minutes. Stir well before serving.

Note: Fish sauce can be found in the international section of many supermarkets.
