Marinated Cucumbers


Serves: 6

Ingredients

3 cups sliced cucumbers
1 medium green pepper, seeded and cut into rings
1 medium red onion, sliced
3 tablespoons polyunsaturated oil
2 tablespoons vinegar
2 tablespoons freshly squeezed lemon juice
1 teaspoon sugar
1/4 teaspoon dill seed
4 radishes, sliced
iceberg lettuce leaves

Directions:

In a large bowl, combine the cucumber, green pepper and onion.

Blend together the oil, vinegar, lemon juice, sugar and dill, pour over the vegetables and toss. Cover and refrigerate for 1 hour. Toss before serving on lettuce leaves garnished with radish slices.
