Beef Stew

Ingredients

2 pounds lean boneless beef chuck cut into 1 inch pieces
2 cups beef stock base
1/2 cup ketchup
1 tablespoon polyunsaturated oil
1 clove garlic, minced
1 bay leaf
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3 medium potatoes, peeled and cut into 1 inch pieces
1 1/2 cups carrots, cut in 1 inch pieces
1 cup celery, cut in 1 inch pieces
1 cup white cannelloni beans

Directions:

Carefully remove all visible fat from the meat and brown under the broiler. Sauté the garlic in the oil until translucent in a large saucepan. Add the meat, beef stock, ketchup, bay leaf, salt and pepper. Add the potatoes, carrot, celery and beans. Simmer for 2 ½ hours or until the meat is tender.
