Hearty Multi-Grain Brown Bread

Ingredients

1 3/4 cups GF Flour Mix
1/2 cup quinoa flakes
1 cup teff flour
1/4 cup sugar
3 1/2 teaspoons xanthan gum
1 1/2 teaspoons salt
1 1/2 tablespoons yeast
1/4 cup vegetable oil
1 3/4 cups warm water
1 teaspoon rice vinegar
3 eggs
1/4 cup sunflower seed (optional)

Directions:

Mix flour mix, sugar, xanthan gum, and salt in the bowl of a stand mixer. Pour yeast on top of the flour mixture. Don't mix it in yet!

Combine the warm water, oil and vinegar. Pour this mixture directly onto the yeast. Let it sit for 3 to 4 minutes. Turn on your mixer to low speed and mix together. Add the eggs. Mix on low until combined, then add the sunflower seeds and beat on high speed for 3 minutes. Turn oven to 375°F.

Spray 2 regular loaf (8 x 4 x 2-inch) pans or 12 English muffin rings well with non-stick cooking spray. Spoon batter into pans (or rings), and let rise on top of your oven as it is heating, about 20 minutes.

Bake loaf pans for 35 to 40 minutes. Bake muffin rings about 20 minutes.
