Mama’s Old-Fashioned Stew

Ingredients

1 - 1 1/2 cups cubed stew meat or roast, cooked
1 (48-ounce) carton beef broth
1 (14 1/2-ounce) can diced tomatoes, undrained
2 medium potatoes, peeled, cut into 1-inch pieces
1 (12-ounce) bag frozen seasoning blend (chopped onion, celery, pepper)
2 cups shredded cabbage
1 (15 1/2-ounce) can red kidney beans, rinsed, drained
1 (14-ounce) can cut green beans
1 cup chopped zucchini
1 teaspoon dried oregano
1/4 teaspoon Tabasco

Directions:

In dutch oven, boil meat, broth, tomatoes, potatoes, and seasoning blend; reduce heat; simmer, uncovered, 15 minutes. add cabbage, both beans, zucchini, oregano, and tabasco. Simmer about 15 minutes more or until vegetables are tender. Salt and pepper to taste, if desired.

Editor’s Extra:
Frozen seasoning blend consists of diced onion, celery, and bell pepper, and is found in the frozen vegetable section of your grocery. If you can’t find it, ask your grocer to carry it, as its convenience will make you want to keep it handy for many dishes that call for these chopped vegetables.
