Burgundy Bacon Beef Stew

Ingredients

2 pounds lean stew meat, cubed
1 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons oil
2 tablespoons tapioca
2 (16-ounce) packages frozen stew vegetables
1 (14 1/2-ounce) can beef broth
2/3 cup Burgundy wine
2 teaspoons minced garlic
4 slices bacon, cooked crisp, crumbled

Directions:

Season beef. Sear beef, half at a time, in oil in large skillet. Transfer to slow cooker. Sprinkle with tapioca. Stir in stew vegetables, broth, wine, and garlic. Cover and cook on low 10–12 hours or on hIgh 5–6 hours. Before serving, sprinkle crumbled bacon on each serving.

Can do in 325° oven, covered, for 2 hours.
