Homemade Mushroom Soup

Ingredients

1/2 onion, thinly sliced
1 teaspoon minced garlic
1 tablespoon butter
1 tablespoon olive oil
8 ounces sliced fresh mushrooms
1 (14 1/2-ounce) can chicken broth
1 1/4 cups water
1/4 cup sherry (optional)
1/4 cup tomato paste
1/2 teaspoon black pepper
1/4 cup shredded or grated Parmesan cheese
snipped parsley for garnish

Directions:

Sauté onion and garlic in butter and oil in a large saucepan over medium heat 5 minutes. Stir in mushrooms; cook, covered, 5 minutes or until mushrooms are tender. Stir in remaining ingredients. Bring to a boil; reduce heat. Simmer, covered, 20 minutes. Top servings with Parmesan cheese and parsley.
