Borscht Made Easy

Ingredients

1 (14 1/2-ounce) can diced tomatoes, undrained
1 (16-ounce) can diced beet, undrained
1 (14 1/2-ounce) can beef broth
2 cups finely shredded cabbage
1/2 cup instant potato flakes
1 teaspoon sugar
1/2 teaspoon dried dill weed
1/2 cup light sour cream
1/4 cup sliced green onions

Directions:

Combine all ingredients except sour cream and green onions. Bring to a boil; reduce heat. Cover and simmer 10–15 minutes. If you prefer a smoother soup, purée mixture. Serve in soup bowls with a dollop of sour cream sprinkled with green onions.
