Cool Carrot Soup

Ingredients

1 (16-ounce) package baby carrots
1 (14 1/2-ounce) can chicken broth, divided
1/4 teaspoon white pepper
dash of ground ginger
1/2 cup sour cream

Directions:

Cook carrots in boiling water for 20–25 minutes or till very soft; drain. Blend carrots and 1/2 cup chicken broth in a blender. Transfer carrots to a large mixing bowl. Stir in remaining chicken broth, pepper, and ginger. Cover and chill. Before serving, stir in sour cream. Top each serving with parsley, if desired.
